Leaf to Water Ratio

Definition:

The leaf to water ratio (also written as leaf-to-water ratio or tea ratio) is the proportion of dry tea leaf mass to brewing water volume. It is one of the three fundamental variables of tea extraction — alongside water temperature and steeping time — and is the primary control for adjusting the concentration and strength of a brewed cup.


Why It Matters

The leaf-to-water ratio determines:

  • Extraction rate: More leaf in the same volume of water means more dissolved solids per unit volume
  • Concentration: Higher ratio → stronger, more concentrated brew
  • Flavour balance: Too much leaf can produce harsh astringency; too little produces a watery, flat cup
  • Number of infusions: In gongfu brewing with high ratios, the same leaf can yield many sequential infusions; in Western low-ratio brewing, one or at most two steeps is typical

Adjusting the Ratio

If the tea is too strong or astringent:

  • Reduce leaf quantity, or
  • Reduce steeping time (preferred for preserving multiple infusions)

If the tea is too weak or watery:

  • Increase leaf quantity, or
  • Increase steeping time

Important: Increasing the amount of leaf and decreasing steep time (or vice versa) produces different results even at the same overall concentration because different compounds (caffeine, theanine, catechins) extract at different rates. Higher leaf with shorter time generally produces a brighter, more aromatic cup than lower leaf with longer steep.


Gongfu Brewing Philosophy

In traditional gongfu brewing, the leaf-to-water ratio is deliberately very high — sometimes filling 60–80% of a small vessel with leaf. This allows very short steeping times (10–30 seconds per infusion) that let the brewer precisely control each successive steep, gradually drawing out different flavour compounds across 6–12+ infusions from the same leaf.


Measurement

  • By weight (grams of tea to millilitres of water) is the most precise and reproducible method
  • By volume (e.g., one heaped teaspoon per cup) is approximate and varies significantly by tea density and leaf type

A kitchen scale measuring to 0.1g accuracy is standard in specialty tea brewing.
